Christy made me a chocolate cake from a gluten-free mix that we had bought at Ingles. It is a Betty Crocker mix. The Devil's Food Cake mix is also corn-free. She accidentally put too much water in so had to add some extra rice flour and some ingredients from her own ideas. It ended up tasting really good.
She used the mini cake pan I bought at Mighty Dollar some time ago. However, there were lots of tiny cakes baked in the silicone mini muffin cups and also in the non-stick muffin tin.
I made some coconut/vanilla frosting with Florida Crystals organic sugar and tapioca starch and butter and organic coconut (also from Ingles) and real Mexican vanilla. It was so delicious.
The day had its down times as I was aware of the difficulties Dad and Mom are facing on the mission field right now. But before bed I went to look at emails on Christy's computer, and her new screen saver was on. She downloaded it from the internet. It was full of beautiful pictures and encouraging verses. Thank You, God.
God is watching over us, and God is watching over Dad and Mom. Everything is under His control. "He shall feed his flock like a shepherd: he shall gather the lambs with his arm, and carry them in his bosom, and shall gently lead those that are with young...
