Some people have a hard time tolerating milk products. Dairy products can trigger allergies or cause irritation to the sinuses. For me, milk not only irritates my sinuses but also my teeth. Every time I start eating more dairy products, I start getting more cavities. Recently my back tooth broke, and other teeth look like they may be starting to demineralize.
Thankfully, there are some healthy and delicious alternatives to milk that are easy to make. One of these is sesame milk.
Here is what you will need to make it:
1 cup sesame seeds
1 quart of water
2 or 3 Tablespoons of date syrup*, honey, or maple syrup.
Instructions:
Soak sesame seeds in purified water for 6 to 8 hours. Drain. Rinse. Then drain again.
Pour sesame seeds and 2 cups of water into blender. Blend well, gradually adding an additional two cups of water. Strain through a strainer or cheese cloth. Be sure to dip strainer in boiling water afterward to sterilize it so that you can use it again when you make the next quart of milk. Save seed mush to add to breads, cakes, or cookies.
Pour milk into a glass quart size jar. Add enough water to make 1 quart of milk. Shake well.
Store in refrigerator. Tastes good for up to 5 days.

- Date syrup is easy to make. To make it, put 1 cup of dates in a bowl (we used the chopped dates from WalMart). Boil about 1 1/2 cups of water. Pour over the dates and allow to sit for about 30 minutes (longer if still too hot). Blend dates and water very well in blender. There is your syrup. It is very sweet. You can add less water to make it thicker or more water to make it runnier. I like it about this thickness. We store ours in an old maple syrup jar. Date syrup should keep in a sealed container in the fridge and will keep for about 2 weeks.
