Monday was a very difficult day. I didn't feel well at all and was somewhat emotionally stressed as well. Christy knew I had had a hard day. When I came to check the emails before bed, she had made this cheery little thing and left it up on the computer for me to see. Isn't she a sweet sister?
Yesterday was a bit better. Made cake and biscuits and cheeseless pizza. The cake was really good. Michael Tierra, in The Way of Herbs, has a recipe for "Special Rice Cream." Just rinse 1 cup of rice and then dry roast. Add a pinch of salt and 10 cups of water and cook on low heat for 3 or 4 hours.
Then take a cotton cloth (I used cheese cloth), and squeeze the cream out through the cloth. Save the rice bran for bread or other baking. He said there should be 3 to 3 2/3 cups of rice cream, but I only got 2 cups.
I added the rice bran to the other ingredients for the cake dough which was made of rice flour. Basically followed a marble cake recipe but did not put in chocolate ore divide the dough in half. Used water instead of milk. Also used honey instead of sugar and only put about 1/3 cup honey. For the topping, I took about 1 cup of the rice cream and mixed it with 1/2 cup of chopped dates and about 3 or 4 tablespoons of pure maple syrup. Poured this over the top and then baked the cake. This was very moist and really delicious!
Chirsty also made a cake - a double layer chocolate cake with icing. It looked (and smelled) really good. Want a taste?
Something else exciting happened yesterday as well. It snowed! They were predicting 2 to 4 inches, but we didn't really get any accumulation of snow as temperatures stayed right around 36 or 37 degrees all day long. It snowed all day though.
