Today was fun. It was catch up in the kitchen time. One of the things I made was a wheat-free chocolate cake. Recently we picked up a holiday recipe booklet at Earth Fare, and in that booklet was a recipe for chocolate cake. So I decided to see if the recipe would work with the wheat-free all-purpose flour, which is mostly made up of bean flour. It worked OK and tastes pretty good too. Want a bite?
This year the trees were so beautiful. Also, the Lord gave us a lovely rose and painted a glorious sunset in the fall sky. Here are a few pictures of the Lord’s handiwork.
On Tuesday Christy and I went to Charlotte for my chiropractor appointments. We decided that we would try going to Trader Joe’s. It was the first time we tried to go alone. We did make a wrong turn, but this turn caused us to end up on a beautiful road lined with sidewalks and lovely trees. As the wind blew, the leaves floated down to the ground as if the air was filled with so much colored confetti. On the road and sidewalks, the trees swirled as little whirlwinds caught them and twisted them around. Oh, it was so pretty.
Finally we did make it to Trader Joe’s, and back again without much problem.
Over the past couple of days, the Lord sent us about 4 ½ inches of rain. About 2 ¾ inches of that rain came yesterday afternoon and evening as some severe storms came through the area. We were under a tornado warning, and there were two possible tornadoes in Kings Mountain. In Shelby there were some trees down and possible damage to a mobile home. Three people were killed in Rock Hill, just 20 miles south of Charlotte. Also, one person was killed in Georgia and two in North Carolina, though none in this area. We thank the Lord for sending the rain, and for His protection. After church last night the roads were very dangerous. The flash flooding, driving rain, and limited visibility made traveling difficult. However, with the Lord’s help, we made it home safe and sound.

One more thing. Today is Mom's birthday. Happy Birthday, Mom! You are lovelier than a rose.
